Ingredients
- Sugar - 1 cup
- Eggs, separated - 3 large
- Unbleached all purpose flour - 1 cup
- Whole Milk - 1 to 3 tablespoons (if needed)
- Peaches, sliced - 3.5 pounds / 1.6 kg
- Raw Almonds, chopped - 1/4 cup
- Amaretto cookies, crushed - 20
- Baking powder - 1 tablespoon + 1 teaspoon
Instructions
- Preheat oven to 350 F / 176 C.
- Whisk sugar and egg yolks, slowly whisking in egg yolks.
- Whisk in milk until it is a pourable batter consistency, if needed.
- Fold peaches, almonds, and cookies into batter.
- Whisk egg whites until stiff, then slowly fold into batter.
- Sprinkle baking powder on top of batter and then fold it in.
- Pour batter into round cake pan, then bake in preheated oven for 30 mins.
