- 4 slices bread, crusts removed
- 100ml milk
- 1 leek (white part only) finely sliced
- 1 red capsicum, finely diced
- 500g (1.1 lbs) minced beef
- 250g (0.55 lbs) minced sausage (For variety, try different meat combinations and sausage types. I like using cajun sausage to add some spiciness)
- 2 tbsp finely chopped Italian parsley
- 1/2 tsp cayenne pepper
- 1/4 tsp nutmeg
- 2 tbsp tomato sauce
- 2 tsp Worcestershire sauce or Dijon mustard (I have only ever used Worcestershire sauce)
- 1 egg, beaten
- 400g (0.88 lbs) canned chopped tomatoes
- 6 cherry tomatoes, halved
- 1/2 tsp dried oregano
Instructions
- Preheat oven to 200 C / 392 F.
- Soak the bread in the milk for a minute or two, then gently squeeze dry.
- Combine everything, except chopped tomatoes and cherry tomatoes, in a large bowl. Using hands, mix well, then add the beaten egg and mix some more.
- Shape the mixture into a loaf shape on a roasting pan lined with greaseproof paper.
- Place the chopped tomatoes and cherry tomatoes along the top.
- Then sprinkle sea salt, pepper and oregano on top.
- Bake for 1 hour or until cooked through. Slice to serve. (Mashed potatoes would be what I would want to serve along with this)
